Our olive oil is made from olives sourced from olive tree fields in Idlib, Syria. While historically our pressing took place in Turkey, we are currently pressing in Idlib, Syria.
A few things actually! The olive trees grow in an area known for its clay red, iron rich soil which is packed with nutrients, allowing the olives to reach their best growth potential. The climate and rain cycle are also ideal for olive tree growth, allowing for minimal intervention. Most unique of all, the trees are naturally irrigated.
For optimal freshness, store your oil in a cool, dark place away from direct sunlight and heat sources. Ebla’s glass bottles are uniquely selected to help maintain your oil’s freshness, however if you prefer to transfer them, use a dark glass container away from direct sunlight and heat.
A few potential reasons for this are: Your fridge temperature may not be low enough, your oil may not have been in the fridge long enough, may be this particular variety of olive, this batch may have a higher monounsaturated fat level, or more.
Change in texture is not a necessary indicator of quality. In fact, lack of change in texture may be an indicator of higher quality. The below article sheds light on the myth of the olive oil fridge test.

No, never. Unless it is explicitly labeled as a blended oil, you can count on 100% pure, Extra Virgin Olive Oil from us. At this time we do not offer anything other than pure olive oil.
