Manaeesh Zaatar

There’s nothing like warm, soft yet crispy manaeesh in the mornings. Growing up, this was a surefire way to know we were about to enjoy a beautiful breakfast gathering. So flavorful, yet so easy and versatile, whether you want it as part of your breakfast spread or simply as a quick snack.

Ingredients

⅓ cup Zaatar

¼ cup Ebla extra-virgin olive oil

¼ cup labne (optional)

3 pieces thick, gyro style bread (AKA pocketless greek pita). If you are unable to find this type of bread, you may also use a thick pita bread, however this will yield crunchier manaeesh as the greek style bread tends to be quite soft.

Putting It Together

Preheat the oven to 400° F and line a baking sheet with parchment paper. Place your bread on the parchment lined baking sheet and set aside.

In a medium sized bowl combine the zaatar and olive oil. Mix well to combine.

Place about 3 tablespoons of the zaatar/olive oil mixture on each piece of bread, using a spoon to spread evenly. Use more as needed to ensure the whole piece of bread is covered, leaving a small uncovered edge as the crust.

Bake for about 8 minutes or until the edges of the bread are a light golden brown. Watch this carefully as the bread can go from golden brown to burnt quickly.

Take out of oven and cut in half (if you choose to), serving immediately. Alternatively, you may let the manaeesh cool slightly, placing a layer of labne inside, wrapping it, and serving it as a wrap. Manaeesh pair beautifully with middle eastern style white cheese or feta as well as vegetables and middle eastern pickles.
